Main Course: Balsamic Roasted Mushrooms and Feta

  1. Preheat oven to 200 degrees Celsius.
  2. Wash and remove the stems of 4 flat mushrooms.
  3. Place mushrooms flat side down on a lined baking sheet.
  4. Drizzle with 2 tablespoons balsamic vinegar and sprinkle with 1 tablespoon fresh thyme.
  5. Bake for 15 minutes and sprinkle with feta cheese when done.

Main Course: Beetroot Risotto

  1. Saute 1 chopped onion and 1 garlic clove in 2 tablespoons olive oil until softened.
  2. Add 1 and 1/4 cup Arborio rice and 2 fl oz of white wine and bring to a boil.
  3. Reduce heat, add 2 and 3/4 cups vegetable stock and stir.
  4. Add 3 beetroots and cook for 10 minutes until softened.
  5. Remove from heat and stir in 3 tablespoons grated Parmesan cheese.
  6. Season with salt, pepper, lemon juice, sprinkle with feta cheese and chopped walnuts

Dessert: Chocolate Bark with Pomegranate and Salt

  1. Cover the pan with parchment paper.
  2. Melt 200 grams of dark chocolate on the stove top or in the microwave.
  3. Spread melted chocolate on a baking sheet, sprinkle with 1/2 cup pomegranate seeds and 1 teaspoon sea salt.
  4. Refrigerate for 30 minutes and enjoy.
